Step-by-Step Instructions
  1. In a food processor, combine the frozen peas, pea shoots, grated parmesan, olive oil, lemon juice, minced garlic, salt, and black pepper. Blend until you achieve a rough paste. Set aside.
  2. Preheat your broiler or grill to medium-high heat. Drizzle olive oil over ciabatta slices and toast for 2-3 minutes on each side until golden brown.
  3. While still warm, rub one side of each ciabatta slice with half a garlic clove to infuse flavor.
  4. Spread a generous layer of the pea topping over the garlic-rubbed side of each toasted slice.
  5. Garnish with extra parmesan, lemon zest, and pea shoots. Drizzle with olive oil and sprinkle with black pepper. Serve immediately.
