Ingredients

For the Oats
  • 1 cup old-fashioned rolled oats This base ingredient gives your oats the perfect creamy texture.
  • 1 cup vanilla yogurt Opt for almond or coconut yogurt for a dairy-free option.
  • 1 cup almond or soy milk Hydrates the oats; feel free to use any plant-based milk or regular milk depending on your preference.
  • 1 teaspoon cinnamon Infuses warmth and flavor; swapping in nutmeg can create a lovely spice twist.
For the Blueberry Sauce
  • 2 cups blueberries Fresh is best for sweetness and color, but frozen blueberries work perfectly without thawing!
  • 1/4 cup water Used for creating the sauce; replace with fruit juice for an extra flavor kick.
  • 1 tablespoon cornstarch Thickens the sauce for the ideal texture; arrowroot makes a great gluten-free substitute.
  • 2 tablespoons sugar Sweetens the sauce; honey or maple syrup can offer a delightful alternative.
  • 1 tablespoon lemon juice Balances out the sweetness and enhances the blueberry flavor; fresh lemon juice is most vibrant!

Equipment

  • Mixing Bowl
  • Saucepan
  • spatula
  • Containers or jars

Method

Recipe Steps
  1. In a mixing bowl, combine the oats, vanilla yogurt, almond or soy milk, and cinnamon. Stir the ingredients together until they are uniformly blended.
  2. Evenly divide the mixture into 5 individual containers or jars, pressing down gently to pack them in.
  3. In a saucepan over medium heat, add blueberries, water, cornstarch, and sugar. Stir continuously while bringing the mixture to a gentle simmer until it thickens.
  4. Once the sauce thickens, reduce the heat, mix in lemon juice, and stir for another minute.
  5. Carefully distribute the blueberry sauce evenly over the oat mixtures in each container, swirling it gently into the oats.
  6. Place the sealed containers in the refrigerator and let them chill for at least 4 hours or overnight.
