Ingredients
  

For the Shrimp
  • 1 pound Shrimp fresh or frozen
  • 2 tablespoons Olive oil can substitute with melted butter or canola oil
  • 2 tablespoons Cajun seasoning homemade or store-bought
For the Pasta
  • 8 ounces Fettuccini pasta or gluten-free pasta
For the Sauce
  • 2 tablespoons Butter can substitute with olive oil
  • 8 ounces Mushrooms cremini or button, chopped
  • 2 tablespoons Shallots chopped; onions can be used
  • 1 cup Chicken broth vegetable broth for vegetarian option
  • 1 cup Sour cream can substitute with Greek yogurt
  • 1 tablespoon Cornstarch can use flour if preferred
  • 1 cup Roasted red bell peppers can use fresh if roasted
  • 2 tablespoons Capers optional
Seasoning
  • to taste Salt
  • to taste Pepper

Method
 

Cooking Instructions
  1. In a medium bowl, combine the thawed shrimp, olive oil, and Cajun seasoning. Toss until shrimp are evenly coated. Let marinate for at least 15 minutes.
  2. Bring a large pot of salted water to a boil. Add fettuccini and cook until al dente, about 8-10 minutes. Drain and set aside.
  3. In a large skillet, melt butter over medium heat. Add mushrooms and shallots, cooking for about 4-5 minutes until tender. Set aside.
  4. In the same skillet, add marinated shrimp in a single layer. Cook for about 2-3 minutes on each side until pink and opaque. Remove and set aside.
  5. Pour chicken broth into skillet and bring to a boil, reducing to about ¼ cup in 3-4 minutes. Mix sour cream and cornstarch with a cup of broth and stir back into the pan, cooking until sauce thickens, about 2-3 minutes.
  6. Return cooked shrimp, sautéed vegetables, roasted red bell peppers, and capers to the pan. Stir to combine and heat through for 2 minutes. Season with salt and pepper to taste.
  7. Serve the Blackened Shrimp Stroganoff mixture over fettuccini, tossing gently to combine. Enjoy!
