- In a medium bowl, combine the thawed shrimp, olive oil, and Cajun seasoning. Toss until shrimp are evenly coated. Let marinate for at least 15 minutes.
- Bring a large pot of salted water to a boil. Add fettuccini and cook until al dente, about 8-10 minutes. Drain and set aside.
- In a large skillet, melt butter over medium heat. Add mushrooms and shallots, cooking for about 4-5 minutes until tender. Set aside.
- In the same skillet, add marinated shrimp in a single layer. Cook for about 2-3 minutes on each side until pink and opaque. Remove and set aside.
- Pour chicken broth into skillet and bring to a boil, reducing to about ¼ cup in 3-4 minutes. Mix sour cream and cornstarch with a cup of broth and stir back into the pan, cooking until sauce thickens, about 2-3 minutes.
- Return cooked shrimp, sautéed vegetables, roasted red bell peppers, and capers to the pan. Stir to combine and heat through for 2 minutes. Season with salt and pepper to taste.
- Serve the Blackened Shrimp Stroganoff mixture over fettuccini, tossing gently to combine. Enjoy!
