Step‑by‑Step Instructions
  1. Cut the bacon into bite-sized pieces and cook in a large skillet over medium heat until crispy, about 5-7 minutes. Set aside.
  2. Dice the small golden potatoes into bite-sized cubes and soak in cold water for 10 minutes to prevent browning.
  3. In the same skillet, add oil and raise the heat to medium-high. Add dried potatoes, seasoning with salt, pepper, and Old Bay. Cook for about 10 minutes, stirring frequently.
  4. Add the crispy bacon back to the skillet and stir to combine. Continue cooking for 4-5 minutes.
  5. Lower heat to medium and add garlic, stirring for about 2 minutes until fragrant.
  6. Drizzle maple syrup over the mixture and cook for an additional minute until caramelized.
  7. Taste and adjust seasonings as needed. Garnish with parsley or chives and serve warm.
