  • 1 large Egg Yolk
Spicy Sauce
  • 1 cup Mayo Kewpie preferred
  • 2 tablespoons Sriracha adjust for spice level
  • 1 tablespoon Sambal Oelek or more sriracha as substitute
  • 1 tablespoon Vinegar white or rice, optional
  • 1 tablespoon Honey maple syrup can be used
  • to taste Salt
  • to taste Pepper
Garnish
  • 2 tablespoons Chives chopped
  • 1 tablespoon Lemon Juice

Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together flour, seltzer, salt, and pepper until smooth. Gradually mix in the egg yolk.
  2. In a deep pan, heat oil to 350°F (175°C), monitoring with a candy thermometer.
  3. Coat shrimp in the prepared batter and fry in batches for 2-3 minutes per side until golden brown.
  4. In a mixing bowl, combine mayo, sriracha, sambal oelek, vinegar, honey, salt, and pepper, stirring until smooth.
  5. Toss fried shrimp in the sauce, garnish with chives and lemon juice, and serve immediately.
