Step-by-Step Instructions
- In a large mixing bowl, combine 1/4 cup of mashed overripe banana, 1/4 cup of melted butter or vegetable oil, and 1/2 cup of light brown sugar. Mix until fully blended.
- Stir in one egg yolk and one teaspoon of pure vanilla extract to your mixture. Blend until well combined.
- Gradually add 1 cup of all-purpose flour, 1/2 teaspoon of baking soda, 1/4 teaspoon of ground cinnamon, and a pinch of salt. Gently fold until no streaks of flour remain.
- Fold in 1 cup of chocolate chips until evenly distributed throughout the batter.
- Allow the cookie dough to rest for about 15 minutes. Preheat your oven to 350°F (175°C).
- Line a cookie sheet with parchment paper and portion out dough balls, spacing them about 2 inches apart.
- Bake for 10-11 minutes until the edges are set but the centers appear slightly underbaked.
- Remove cookies from the oven and let cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
