Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking dish with olive oil.
  2. Pour a tablespoon of olive oil into a frying pan over medium heat. Add the grated zucchini and frozen spinach, sauté for 3-4 minutes.
  3. In a mixing bowl, crack 4 large eggs and whisk. Stir in the grated cheddar cheese, flour, onion powder, and salt until smooth.
  4. Let the sautéed vegetables cool, then fold them into the egg mixture.
  5. Pour the mixture into the greased baking dish and bake for 15-20 minutes.
  6. Remove from oven, cool for a few minutes, then cut into 8 strips or 16 squares.
