  • 1 large Egg
  • 1/2 cup Milk or almond milk
  • 1/4 cup Melted Butter or coconut oil
  • 1 teaspoon Vanilla Extract
For the Sweet Glaze
  • 1 cup Powdered Sugar
  • 2 tablespoon Milk or Lemon Juice

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, and any optional spices.
  3. In another bowl, whisk egg and add milk, melted butter, and vanilla extract, blending until smooth.
  4. Pour the wet mixture into the dry ingredients and stir gently. Fold in diced rhubarb.
  5. Drop mounds of batter onto the baking sheet, leaving space between each mound.
  6. Bake for 12 to 16 minutes until golden brown and a toothpick comes out clean.
  7. Mix powdered sugar with milk or lemon juice for the glaze until desired thickness.
  8. Brush warm fritters with the glaze for a beautiful sheen.
  9. Broil under high for 30 to 90 seconds for a crackly top.
