Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, and any optional spices.
- In another bowl, whisk egg and add milk, melted butter, and vanilla extract, blending until smooth.
- Pour the wet mixture into the dry ingredients and stir gently. Fold in diced rhubarb.
- Drop mounds of batter onto the baking sheet, leaving space between each mound.
- Bake for 12 to 16 minutes until golden brown and a toothpick comes out clean.
- Mix powdered sugar with milk or lemon juice for the glaze until desired thickness.
- Brush warm fritters with the glaze for a beautiful sheen.
- Broil under high for 30 to 90 seconds for a crackly top.
