  • 1 tbsp Everything But The Bagel Seasoning Enhances flavor.
For the Salad Topping
  • 2 cups Arugula Can substitute with mixed greens or spinach.
  • 2 tbsp Olive Oil Any light salad oil will work.
  • 1 tbsp Lemon Juice Can be interchanged with white wine vinegar.
  • 2 tbsp Parmigiano Cheese Freshly shaved enhances the experience.

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C). Thaw puff pastry on a floured surface and bring eggs to room temperature.
  2. Roll out the thawed puff pastry on a floured surface until about a quarter-inch thick. Place it in the tart pan and trim excess edges.
  3. Brush the pastry with an egg wash and sprinkle with Everything But The Bagel seasoning. Bake for 10 minutes.
  4. Spread Boursin cheese over the tart base. Crack eggs on top and season lightly with salt. Bake for an additional 12-14 minutes.
  5. Remove the tart from the oven, sprinkle with crispy prosciutto and green onions. Allow to cool briefly.
  6. In a bowl, toss arugula with olive oil, lemon juice, and a pinch of salt.
  7. Place dressed arugula atop the tart, shave Parmigiano cheese over the salad, slice, and enjoy!
