  • 1 cup green lentils cooked until tender
  • 1 cup breadcrumbs use gluten-free if needed
  • 1/4 cup parsley finely chopped
  • 1 tbsp dill fresh or dried
  • 1 tbsp oregano gluten-free if needed
  • 1 tsp cumin
  • 2 cloves garlic minced, optional
  • 2 tbsp olive oil extra virgin recommended
  • 1 large egg or flax egg for vegan option
For the Tzatziki
  • 1 cup Greek yogurt or yogurt alternative for dairy-free
  • 1 medium cucumber grated and squeezed dry
  • 1 tbsp lemon juice
  • to taste salt
  • to taste pepper

Method
 

Baked Greek Lentil Meatballs Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, mash the cooked green lentils until mostly smooth. Stir in breadcrumbs, minced garlic, parsley, dill, oregano, cumin, salt, pepper, olive oil, and egg until just combined.
  3. Form the lentil mixture into 1 to 1.5-inch balls and place them on the prepared baking sheet.
  4. Bake for 20-25 minutes, flipping halfway through until golden and firm. Optionally broil for 1-2 minutes for extra crispiness.
  5. While they bake, whisk together Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, and a pinch of salt for the tzatziki. Chill for at least 20 minutes.
  6. Serve the warm meatballs with tzatziki, garnished with lemon wedges and cucumber slices.
