Method
 

Step-by-Step Instructions
  1. Pat the 1.5 lb cod dry with paper towels and set aside.
  2. In a bowl, combine 1/2 cup all-purpose flour, 1 tsp ground coriander, 3/4 tsp paprika, 3/4 tsp ground cumin, 3/4 tsp salt, 1/2 tsp black pepper, and 1/4 tsp red pepper flakes. Stir thoroughly.
  3. Preheat your oven to 400°F (200°C).
  4. Whisk together 6 tbsp lemon juice, 5 tbsp olive oil, and 2 tbsp melted butter. Stir in 6 minced garlic cloves.
  5. Dip each cod piece into the lemon-garlic sauce, then dredge in the flour-spice mixture.
  6. Heat olive oil in a skillet over medium-high heat. Sear the cod for about 2 minutes on each side until golden brown.
  7. Pour the remaining lemon-garlic sauce over the seared cod. Bake in the preheated oven for 8-10 minutes until the cod flakes easily.
  8. Garnish with 1/4 cup finely chopped parsley and serve with pan juices.
