For the Fish
  • 1 lb cod fillets can substitute with rockfish, halibut, tilapia, or sea bass
  • 2 tbsp taco seasoning use homemade or store-bought
For the Slaw
  • 1/2 cup mayonnaise or plain yogurt yogurt is a lighter option
  • 2 tbsp fresh lime juice fresh juice is preferred
  • 2 cups shredded cabbage & red cabbage can explore other greens
  • 1 cup grated carrots adjust based on preference
  • 4 stalks green onions chives can be a substitute
  • 1/4 cup fresh cilantro optional, can use parsley
For the Salsa
  • 1 small red onion
  • 1 large red bell pepper
  • 1 medium jalapeño adjust amount for heat level
  • 1 cup frozen corn thaw before using
  • 1 15 oz can canned black beans rinse before using
  • 1 medium avocado slice or cube before serving
  • 2 wedges lime
  • 1/4 cup additional cilantro

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, whisk together mayonnaise or plain yogurt, taco seasoning, and fresh lime juice until smooth. Add shredded cabbage, grated carrots, green onions, and cilantro. Toss well and set aside.
  2. Pat the cod fillets dry, season both sides with taco seasoning, and cook in a heated skillet with oil for 4 minutes, then flip and cook another 4 minutes until flaky.
  3. In the same skillet, sauté chopped onion, bell pepper, and jalapeño for 1 minute. Then add thawed corn and rinsed black beans, cooking for 2 more minutes. Season with taco seasoning and lime juice.
  4. Assemble the bowls with slaw as a base, layer salsa, top with cooked fish, add sliced avocado, and sprinkle with cilantro. Serve with lime wedges.
