Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Pound the pork tenderloin to about ¾ inch thick between plastic wrap.
  3. Sauté diced onion in olive oil for 3-4 minutes, add garlic and spinach, cook until spinach wilts, then mix in cream cheese and herbs.
  4. Create a weave with bacon strips on a flat surface.
  5. Place the pork in the center of the bacon weave, season, and spread the spinach filling over it.
  6. Roll the bacon tightly around the pork and secure with toothpicks.
  7. Bake in the preheated oven for about 75 minutes until internal temperature reaches 145°F (63°C).
  8. Sauté chopped bell peppers for 3-4 minutes, add broccoli and tomatoes, and season.
  9. Let the tenderloin rest for 10 minutes before slicing and serving with sautéed vegetables.
