  • 3 tbsp Palm Sugar Can replace with brown sugar or honey
  • 4 tbsp Fish Sauce Gluten-free soy sauce can be used as alternative

Cooking Steps
  1. Toast coriander seeds, cumin seeds, and black peppercorns in a dry skillet over medium heat for about 20 seconds until fragrant.
  2. Transfer toasted spices to a mortar and pestle, add fresh garlic, and grind into a fine paste.
  3. In a bowl, combine ground spices, palm sugar, fish sauce, and salt, then add thinly sliced pork and coat evenly.
  4. Refrigerate marinated pork for at least 4 hours or overnight for optimal flavor.
  5. Lay pork slices on a drying rack, sun-dry for 4-12 hours or use a dehydrator set to 145-155°F for 4-8 hours.
  6. Deep-fry in heated oil at 350-375°F for 3-5 minutes until golden brown or grill for 8-10 minutes until charred.
